Banana and Coconut Pancakes
Makes 24 pancakes
How to make it
- Mix flour, sugar, baking powder, and salt in a large bowl.
- In the centre, add milk, coconut oil, vanilla, and eggs.
- Mix well until smooth. Let rest for a few minutes.
- Heat a non-stick pan and lightly oil it.
- Pour ¼ cup of batter into the pan and swirl to make a circle.
- Cook until bubbles form and edges look dry, then flip.
- Cook other side until golden brown.
- Serve with banana slices, coconut, and a sprinkle of cinnamon.
