How to make it
- Prepare the papaya:– peel the fruit in half, remove seeds, and slice into thin strips or cubes (¼–½ inch thick).
- Soak to keep colour (optional):– mix 1 tablespoon of lime juice with 1 cup of water– soak slices for 5-10 minutes.
- Dry the papaya:– food dehydrator: place slices on trays without overlapping– dry at 135°F (57°C) for 8–12 hours, flipping halfway– oven: set oven to the lowest heat (around 140°F/60°C)– lay slices on a tray– leave the door slightly open to let moisture escape– dry for 6–8 hours, checking often.
- Check if they are ready:– slices should be leathery, and not wet.
- Store– let them cool– keep in airtight jars or bags– for humid places, add a food-safe dessicant packet to keep them dry (if available).
